2 T butter
1 small yellow onion, diced
1 small bell pepper, diced
8 oz mushrooms, minced (optional)
2 T ketchup
1 T Worcestershire sauce
½ tsp salt
½ tsp black pepper
1 T cornstarch
1 cup beef broth
¼ cup queso (from a jar)
8 oz provolone cheese,sliced
6 brioche hamburger buns
Add the ground beef to a large cast iron skillet (this browns very well) and brown on medium-high heat until a deep brown crust appears before breaking the beef apart or stirring.
Remove the beef (you can leave the fat) and add the butter and the onions and bell peppers and mushrooms.
Let brown for 1-2 minutes before stirring, then let brown for another 1-2 minutes before stirring again.
Add the beef back into the pan.
In a small cup mix the beef broth and cornstarch together
Add the ketchup, Worcestershire sauce, salt, black pepper, beef broth/cornstarch mixture into the pan.
Cook until the mixture is slightly thickened 3-5 minutes. Add queso & stir.
Turn off the heat, add in 4 oz provolone cheese. Start with half the cheese and then add a bit more at a time until it's as cheesy as you like it.
Served on toasted brioche buns. Top with sliced provolone if desired & let melt.
